Maple would be fine if you have it (I’ve used it). White oak is one of the premium boat woods, and I would highly recommend its use as it is very strong and extremely rot resistant. Don’t use red oak as it readily soaks up water into the end grain when the canoe is stored upside down. Cherry is also a very good choice.
